CHARACTERISTICS This pasta is made in Gragnano, the home of Italian pasta, using the highest quality durum wheat, which is responsible for its amazing flavour. The durum wheat is slowly blended with the purest water then the dough is wiredrawn across bronze moulds, whose ridges give the pasta a certain bumpiness, which improves the retention of the sauces that will accompany it. The pasta is then slowly dried at a low temperature in order to preserve the flavour of the durum wheat. Carli Pasta is available in three types: Penne Rigate, Caserecce, Ziti Corti Rigati.
