How do we better preserve olive oil?

Adverse conditions weight upon quality. The most important alteration is oxidation, in other words the oil going rancid. The main factor that cause this alteration are oxygen, lighting exposure and on contact with some metals and even free fatty acids. Carli olive oil is always bottled in new, carefully cleaned glass containers. We do not recycle bottles, as we think they are not suitable for a second usage. We only use glass bottles and tinning containers, as these materials guarantee a higher stability of the organoleptic characteristics. Moreover the bottles used are of a dark green colour, so that penetration of lighting and ultraviolet’s radiations get difficult. Although customers should follow some further precautions:

  • ideal temperature for preservation is in between 10/20° Celsius;
  • direct and diffuse daylight speeds oxidation up. That is why we recommend to store your supply in a dark environment;
  • containers should be kept always airtight sealed for many reasons. One of them is that there are some domestic animals (i.e. house mice and ants) greedy of olive oil. That is why we suggest you to keep checking on your supply periodically;
  • moreover we suggest you to pour the olive oil in either crystal or transparent glass oil cruets only just before usage.
    Best stored in its dark green glass bottles or tins.
