Preparation
Pre-heat oven at 200°. Sautè the onion and garlic in oil, add the tomatoes, thyme and laurel, season with salt and pepper and simmer for 15 mins. Cook the penne in a saucepan of boiling salted water, drain and mix with the tomato sauce. Pour the pasta into a gratin dish. Drain the artichokes, cut them into thin slices and spread them over the pasta, then sprinkle the mozzarella on top. Place the dish for several minutes in the oven until the cheese is melted. Suggestion: You can replace the mozzarella with gruyere or another cheese.
