Pasta with Dried Tomatoes

Ingredients (For 6 people):
500 g Caserecce, 2 aubergines, 2 courgettes, ½ jar of Carli Peppers, 4 Carli Dried Tomatoes, 2 onions thinly sliced, 8 tablespoons of Carli Extra Virgin Olive Oil Delicato, salt, pepper.

Time required: 15 minutes preparation time + 20 minutes cooking time

Preparation
Cook the pasta in a large pot full of salted water. Drain it and put it in a bowl drizzling it with oil. Wash the vegetables. Dice the aubergines and courgettes. Cut the dried tomatoes and peppers into thin slices. Gently brown the onions and peppers in olive oil for 3 minutes in a high-sided frying pan. Add the tomatoes, aubergines and courgettes. Add salt and pepper, cover and let simmer for 20 minutes stirring regularly. Pour the vegetables onto the pasta and mix together. Serve cold.
This salad with its subtle flavours and attractive colours is a complete meal in itself that combines vegetables and a starchy carbohydrate. And it is also a treat for your taste buds!
