Peppers and courgettes savoury cake

Ingredients (For 4 people):
1 jar of Roasted Peppers, 2 small courgettes, 4 tablespoons of Cooking Olive Oil Tradizionale, 2 thinly sliced onions, 6 eggs, 100 ml of fresh cream, 1 bunch of chives, salt, pepper.

Time required: 10 minutes preparation time + 30 minutes cooking time

Preparation
Wash the courgettes and cut into thin slices. Gently brown the onions and courgettes in olive oil for 5 minutes in a high-sided frying pan. Add the drained peppers and mix in. Add a little of salt and pepper and continue to cook for further 3 minutes. Beat the eggs in a mixing bowl as if making an omelette, add the fresh cream, all the vegetables and the finely chopped chives. Add salt and pepper according to your taste. Pour this mixture into a greased baking tin and cook for 30 minutes in a preheated oven at 180°. Let cool for 10 minutes before turning out.
This delicious vegetable cake can be prepared very quickly. You can make it the day before and eat it cold, cut into generous slices.
