Preparation
Cook the penne in a large saucepan of salted boiling water. Meanwhile, fry the prawns and halved artichokes in the oil in a shallow pan. Add pepper and allow to cook for 2 minutes. Take 3 tablespoons of pasta cooking water and mix with the pesto. Add this sauce to the al dente pasta, and then mix in the prawns and artichokes. A delicious combination of surf and turf!
