Ingredients (For 20 fritters):
200 g flour, 3 eggs, 3 tablespoons of Carli Tradizionale Cooking Olive Oil + 500 ml for frying, 150 ml milk, 1 teaspoon of finely ground salt, 6 tablespoons of sugar, 500 g fruit (apples, pears, pineapples…).
Time required: 10 minutes preparation + 15 minutes cooking time
Preparation
In an earthenware bowl mix the flour, salt and 1 tablespoon of sugar. Add the egg yolks, 3 tablespoons of oil and thin with the milk until you have a smooth consistency. Beat the egg whites until stiff and gently add them to the smooth mixture. Peel and cut the fruit into rounds. Heat the 500 ml of oil in a large high sided saucepan. Coat the fruit with the mixture and place in the oil 4 at a time. Leave until golden, 1 to 2 minutes each, then place the fruit fritters on kitchen paper and sprinkle with sugar. Serve these fruit fritters while still hot. You will enjoy the crispness of the batter and the full flavour of the fruit because you have fried them in Carli Olive Oil.
