Prepare the pastry by mixing together the ingredients, then roll it out on greaseproof paper and fit into the tart tin. Cover the bottom of the pastry base with a paper circle and pulses (lentils or dried beans). Cook for 10 minutes in an oven preheated to 180°C, then take out the pulses and the paper. Brown the onions in oil for 5 minutes. Beat the eggs with the mascarpone, lightly salt and add the drained and crumbled sardines. Fill the bottom of the tart base with the onions and chives, and then pour over the mascarpone mixture. Cook for 20 minutes in an oven preheated to 180°C.
Serve this quiche with green salad or cut it into small squares and serve to your friends as an aperitif.
