Cherry Delight

Ingredients (For 6 people):
500 g black stoned cherries, 100 g flour, 80 g sugar, 8 tablespoons of “Tradizionale” Carli Olive Oil, ½ sachet of baking powder, 3 eggs, 100 ml of milk, 3 tablespoons of kirsch, 2 tablespoons of honey, 1 pinch of salt.
 
Time required: 10 minutes preparation + 40 minutes cooking time

Preparation
In a bowl, whip together the sugar and eggs. Mix in the flour to which the baking powder has already been included, then the salt. Add the milk slowly and 6 tablespoons of oil in order to make a thick mixture. Flavour with some kirsch. In a frying pan, heat the rest of the oil, add the honey and fry the cherries for 3 minutes. Allow to cool and combine with the mixture. Pour the preparation into a tin that has been lightly greased and floured. Cook for 40 minutes in an oven preheated to 180°C. Serve warm with a ball of vanilla ice cream to perfectly compliment the flavour of the cherries.
