Preheat the oven to 180°C. Mix together the milk, the oil and then the beaten egg. Mix together the flour, sugar, baking powder and salt in a bowl and add it to the liquid mixture. Combine all together until you have made a smooth consistency. Oil the muffin tins and fill half with the mixture, then add a generous tablespoon of jam and cover with the mixture. Cook for about 18 minutes and leave to stand for a few minutes before taking out of their tins. You can vary the fillings by replacing the fruits of the forest jam with orange or apricot jam. Such a delicious treat!
