Pasta with Ricotta Cheese and Asparagus

Ingredients (For 4 people):
320 g of Carli Caserecce, 300 g of asparagus, 150 g of ricotta cheese, 80 g of bacon, 40 g of Grana Padano cheese, 30 g of onion, Carli Extra Virgin Olive Oil Delicato, salt.
 
Time required: 45 minutes

Preparation
Peel the asparagus, wash and cook them in salted boiling water. Drain, remove their heads and keep for decoration. Put the rest of the asparagus in a blender with the ricotta cheese and the Grana Padano cheese until you have a smooth cream.
In a frying pan fry the chopped onion with the thinly sliced bacon. Allow to simmer for 10 minutes having added a tablespoon of water. Add the ricotta and asparagus mixture and salt to taste. Cook the Caserecce pasta in a large quantity of salted boiling water then drain. Flavour the pasta with the sauce and decorate the dish with the asparagus tips.
