Ingredients (For 4 people):
250 g of Carli Caserecce, 2 garlic cloves, 2 Carli Sardines, 1 tablespoons of capers, 1 small red chilli, 300 g of tomato coulis, 1 tablespoon of chopped parsley, 5 eggs, 50 g of Provola stagionata cheese, Carli Extra Virgin Olive Oil Delicato, salt, pepper.
Time required: 60 minutes
Preparation
Brown the peeled garlic, the sardines, the chilli in the oil, then add the tomato coulis and
leave to simmer for 30 minutes. Add salt and pepper. Grate the cheese and mix with the
beaten eggs. Add the capers and parsley. Cook the Caserecce pasta until al dente, drain then pour into the spicy
tomato sauce. Oil a small 18 cm pan, take a small amount of the pasta and reheat it. Add a few tablespoons of
the egg and cheese mixture. Fry and turn the fritter so that it cooks on the other side. Continue in the same
way until you have used all the ingredients.
