Autumn Ziti

Ingredients (For 4 people):
350 g of Carli Ziti Corti Rigati, 300 g of lamb, 12 to 15 grilled chestnuts, 1 small onion, 2 tablespoons of grated pecorino cheese, 1 sprig of rosemary, 1 glass of red wine, 4 tablespoonsof Carli Extra Virgin Olive Oil Delicato, salt, pepper.
 
Time required: 60 minutes

Preparation
Dice the lamb. Chop the onion and fry until it is golden. Add the meat, brown and douse with the wine. Cook for 10 minutes on a high heat, then lower the heat and continue to cook for 20 minutes adding water from time to time. Add salt and pepper. Peel the chestnuts. Add them to the lamb and cook again for a further 15 minutes. Cook the pasta in a large quantity of salted boiling water until al dente, drain and then pour onto the sauce. Flavour with rosemary and sprinkle with grated pecorino. Mix together and serve hot.
