Club-sandwich with Pesto
Ingredients (For 4 persons):
4 chicken escalopes, 1 jar of Carli Pesto, 2 tablespoons of Carli Extra Virgin Olive Oil, 12 slices of bread, 12 rashers of bacon, 4 lettuce leaves, 2 sliced tomatoes
Time required: 15 minutes preparation plus 20 minutes cooking time.

Preparation
Fry the chicken escalopes in the oil and brown the bacon. Toast the slices of bread, and then spread with Pesto. Place a chicken escalope on a slice of bread, then add some bacon. Cover with another slice of bread, lettuce and tomatoes and finish by adding a further slice of bread spread with pesto on the side facing down onto the lettuce and tomato. Hold the sandwich together with cocktail sticks and cut into triangles. Serve with coleslaw salad.
