Chocolate Tartlets

Ingredients (For 4 persons):
For the pastry: 150g of flour, 100 ml of Carli Cooking Olive Oil, 90 g of sugar, 1/2 teaspoon of salt, 1 egg 3 tablespoons of water, 2 tablespoons of cocoa powder
For the filling: 150 g of dark chocolate, 2 eggs, 1 tablespoon of sugar

Time required: 20 minutes preparation plus 50 minutes cooking time.

  
Preparation

Prepare the pastry dough by mixing the ingredients, let it settle for 1 hour in the fridge and then roll it out on to greaseproof paper. Divide the pastry dough among some tartlet tins, previously strewed with oil and flour. Cover the pastry base of each tartlet with a circle of paper and dried vegetables (lentils or beans). Cook the pastry for 20 minutes in a preheated oven at 180°, then remove the dried vegetables and paper and let the pastry get cold. In the meantime, melt the cocoa powder in 2 tablespoons of water in a small saucepan. Take the saucepan away from the heat, add the egg yolks and whisk until the mixture gets smooth. Beat the eggs whites with sugar until stiff and add them gently to the chocolate mixture. Fill the tartlets and put in the frige for 2 hours. To serve, decorate with raspberries and mint.
