ArtichokeArtichoke Frittata (Omelette)

Ingredients (for 4 persons):
1 jar of Carli Artichokes, 1 clove of garlic finely chopped, 3 tablespoons of Carli Extra Virgin Olive Oil, 8 eggs, 3 tablespoons of milk, 1 tablespoon of flour, 3 tablespoons of grated Parmesan or Gruyere cheese, 100g fresh aromatic herbs, chopped (e.g. : chives, parsley, rocket….), Salt, pepper
 
Time required: 5 minutes preparation + 5 minutes cooking time.

  
Preparation

Drain the artichokes and cut in halves. Mix the eggs with cheese, milk and flour until the mixture gets smooth. Add salt and pepper. Heat the oil in a non-stick frying pan and briefly fry the artichokes, garlic and herbs. Pour the mixture into the pan and allow to cook on a low flame for 3 or 4 minutes. Then turn the frittata (omelette) and cook the other side for 2 minutes. Take the Frittata out of the pan and serve hot with a green salad.
This delicious vegetable cake can be prepared very quickly. You can make it the day before and eat it cold, cut into generous slices.
