Ingredients (for 6 persons):
1 chicken cut into pieces, ½ jar of Carli stoned black olives,
2 chopped cloves of garlic, 5 tablespoons of Carli Extra Virgin Olive Oil,
4 bay leaves, 4 sprigs of thyme, 1 tablespoon of honey, 4 tomatoes,
1 lemon, salt, pepper
Time required: 5 minutes preparation + 30 minutes cooking time
Preparation Mix honey, lemon juice, olive oil, thyme leaves (stripped
off the stem) and chopped garlic in a bowl. Add salt and pepper. Soak
the chicken pieces in this marinade. Place the chicken in a roasting
tin and cover with the marinade. Add black olives, bay leaves and the
quartered tomatoes. Cook in a preheated oven at 180°C for 30 minutes
until the chicken gets golden. Full of simple familiar flavours, this
chicken dish is delicious served with oven roasted potatoes.
