Ingredients (for 4 persons):
1 jar of Carli Artichokes, 2 jars Carli Pesto, 1 litre of Béchamel Sauce, 12 pre-cooked sheets of lasagne, 100g grated parmesan, 3 tablespoons of pine nuts, 2 tablespoons of Carli Extra Virgin Olive Oil, Pepper
Time required: 10 minutes preparation + 20 minutes cooking time
Preparation
Drain the artichokes and cut into thin slices, then fry in olive oil for 3 minutes in a shallow pan. Add the pesto to the hot béchamel. Season with pepper. Cover the bottom of a gratin dish with a little of the pesto sauce, and sprinkle with parmesan. Place 3 lasagne sheets on top, then the thinly sliced artichokes. Cover with the sauce and parmesan and then start
the whole procedure again. Finish with a layer of sauce and sprinkle with parmesan and some pine nuts. Cook in a preheated oven at 180°C for 20 minutes and serve immediately.
This is a perfect meal to serve on Easter Monday…for as the saying goes, avoid pining the year away!
