Oven Baked Sea BreamOven Baked Sea Bream

Ingredients (For 6 persons):
3 sea breams cleaned, gutted and descaled, 1 jar of Carli Dried Tomatoes, 1 jar of Carli Peppers, 1 aubergine, 2 courgettes, 2 cloves of chopped garlic, 1 thinly sliced onion, 1 sprig of thyme and rosemary, 6 tablespoons of Carli Extra Virgin Olive Oil, Salt and pepper and some olives in brine
 
Time required: 10 minutes preparation + 30 minutes cooking time

  
Preparation

Dice the aubergine and courgettes. Lay in the bottom of a gratin dish with the onion, garlic, drained peppers and thyme. Add salt and pepper and drizzle with 4 tablespoons of the olive oil. Cook in a preheated oven at 180°C for 10 minutes stirring from time to time. Brush the bream with the rest of the oil, add pepper but no salt and lay on top of the vegetables. Sprinkle with the dried tomatoes and the olives cut into strips and continue to cook in the oven for a further 20 minutes. Serve as soon as ready with the vegetables arranged around the bream. This dish is bursting with an array of flavours!
