Chocolate and nut cookiesChocolate and nut cookies

Ingredients (For 4 persons):
250 g flour, 120 ml Carli Cooking Olive Oil, 100 g chocolate chips, 50 g shelled, crushed walnuts, 50 g castor sugar, 2 sachets of vanilla sugar, 1 beaten egg, 1 pinch of salt
 
Time required: 10 minutes preparation + 10 minutes cooking time

  
Preparation

In a bowl, work the sugar into the oil. Add the flour and mix together until it gets a gritty consistency. Add 2 tablespoons of the beaten egg to bind the mixture together. Add the chocolate and the nuts working them into the mixture until they are evenly distributed. Divide the mixture into small balls the size of large nuts and flatten each gently, then lay them on a baking tray covered with grease-proof paper. Cook for 10 minutes in a preheated oven at 180° C, checking them regularly. Take the cookies out of the oven before they start to darken in colour - this is the secret of their exceptional moistness. Eat warm, when the chocolate is still melted: they are impossible to resist!
