Oil subjected to freezing temperatures does not undergo harmful changes; however, once it has been returned to normal temperatures (even by brief immersion in a double-boiler), it must not be subjected anew to low temperatures.

When products such as oil freeze, spontaneous oxidizing processes are accelerated and the duration of normal preservation is diminished; thus it is also important to keep the oil container well-closed.

Transparent oil containers increase drastically the risks deriving from exposure to light; it is best therefore to choose oil sold in cans or dark bottles for best preservation.
