Colomba, bearer of good news!
Initially a cake symbolizing peace, over the years Colomba has been eaten by Italians at the end of the Easter meal. It is uniquely shaped in the form of a dove and according to legend, it is the precursor of good news. That’s why it is customary to offer it as a gift to family and friends so that they receive happy messages! |

The traditional Italian recipe for Colomba comprises flour, sugar, eggs and yeast, together with a generous quantity of candied orange peel carefully selected for its rich flavour. The Colomba, covered with icing sugar and sprinkled with whole almonds, is unique due to its crunchy outer crust and its amazingly soft inner texture. However, our very special recipe for our delicious Carli Colomba has a secret ingredient that ensures a superbly light texture – our olive oil.
