These young artichokes that are both tender and crunchy are prepared in the traditional way, taking the greatest care possible to preserve their inimitable flavour. An excellent olive oil, together with a touch of vinegar and salt mean that they are perfectly preserved.
Enjoy them in a salad, on a pizza, as a filling for savoury tarts or even mix them with other Mediterranean vegetables to make a colourful and sophisticated aperitif.
CS - Artichoke Hearts

Ingredients (for 4 persons): 1 jar of Carli Artichokes, 1 finely chopped clove of garlic, 3 tablespoons of Carli Extra Virgin Olive Oil, 8 eggs, 3 tablespoons of milk, 1 tablespoon of flour, 3 tablespoons of grated Parmesan or Gruyere cheese, 100 g fresh chopped aromatic herbs, (e.g. : chives, parsley, rocket….), salt, pepper.

5 minutes preparation time + 5 minutes cooking time
Preparation:
Drain the artichokes and cut in halves. Mix the eggs with cheese, milk and flour until the mixture gets smooth. Add salt and pepper. Heat the oil in a non-stick frying pan and briefly fry the artichokes, garlic and herbs. Pour the mixture into the pan and allow to cook on a low flame for 3 or 4 minutes. Then turn the frittata (omelette) and cook the other side for 2 minutes. Take the frittata out of the pan and serve hot with a green salad.
